GN Pan Sizes: Full, Half, Third and Quarter Hotel Pans

Hotel pans follow the GN (Gastronorm) sizing standard used across commercial foodservice. The full size hotel pan measures 12 by 20 inches and is the base reference for all other sizes. Fractional sizes fit inside or alongside a full size pan, making them compatible with the same steam tables, holding cabinets and prep table wells.

Pan Size Dimensions (inches) Fits Inside Full Size Common Use
Full Size (1/1) 12 x 20 1 pan Large volume proteins, pasta, soups in steam tables
Half Size (1/2) 10 x 12 2 pans Buffet lines, prep table wells, standard catering
Third Size (1/3) 6.3 x 12 3 pans Side dishes, condiments, smaller portions
Quarter Size (1/4) 6.3 x 10 4 pans Sauces, garnishes, compact prep stations
Sixth Size (1/6) 6.3 x 6.6 6 pans Toppings bars, condiment stations, hotel pans for small portions
Ninth Size (1/9) 4.3 x 6.6 9 pans Individual serving inserts, specialty bars

Steam Table Pans for Buffets and Catering

Steam table pans are the most common hotel pan type in this collection, with 182 NSF-rated options from Winco and Thunder Group. They are designed to sit directly in steam table wells, holding food at safe serving temperatures during buffet and catering service. Stainless steel steam table pans are the most durable choice for daily commercial use. Polycarbonate food pans are a lighter alternative suited to cold holding in prep table wells and salad bars.

Stainless Steel, Polycarbonate and Aluminum Hotel Pans

The right material depends on the application. Stainless steel hotel pans handle heat, direct flame and heavy daily use without warping. Polycarbonate hotel pans are clear, making them easy to identify contents at a glance, and are lightweight for front-of-house display and cold use. Aluminum and aluminized steel bain maries are common in baking and pastry production. Bain maries are water bath pans used for gentle, even heat transfer when cooking custards, sauces and delicate preparations.

All hotel pans, hotel sheet pans, hotel pan rack and commercial baking hotel trays in this collection are in stock and available for immediate shipping. Use the filters to sort by material, product type, capacity or NSF certification. For questions about sizing or compatibility with your steam table or prep table, contact Amechef directly.

FAQs

What is a hotel pan?
A hotel pan is a rectangular foodservice container that follows the GN (Gastronorm) sizing standard. Full size hotel pans measure 12 by 20 inches. Fractional sizes, including half, third, quarter, sixth and ninth, are designed to fit inside the same full size opening. Hotel pans are used in steam tables, holding cabinets, refrigerated prep tables and ovens.
What size hotel pan do I need?
The size depends on your steam table or prep table well dimensions and your portion requirements. Full size (1/1) pans hold the largest volumes and suit high-output proteins and soups. Half size (1/2) pans are the most common choice for standard buffet and catering lines. Third, quarter and sixth size pans work well for side dishes, sauces and condiment stations.
What is the difference between stainless steel and polycarbonate hotel pans?
Stainless steel hotel pans are designed for hot holding in steam tables and direct oven use. They are highly durable and the standard choice for commercial kitchens with heavy daily use. Polycarbonate hotel pans are clear, lightweight and suited for cold holding in refrigerated prep tables and salad bars. Polycarbonate pans should not be used in ovens or on direct heat sources.
Are your hotel pans NSF certified?
Yes. The majority of hotel pans in this collection carry NSF certification, which indicates they meet the sanitation and materials standards required for commercial foodservice use. You can filter the collection by NSF certification using the Features filter on this page.
What depth hotel pan should I buy?
Hotel pan depth is measured in inches. Two-and-a-half inch pans are used for shallow items like sliced meats, roasted vegetables and sheet pan recipes. Four-inch pans are the most versatile and cover most catering and buffet applications. Six-inch pans hold large volumes of soups, stews and braised proteins. Check your steam table well depth before ordering to confirm fit.
