What is a hotel pan? ›
A hotel pan is a rectangular foodservice container that follows the GN (Gastronorm) sizing standard. Full size hotel pans measure 12 by 20 inches. Fractional sizes, including half, third, quarter, sixth and ninth, are designed to fit inside the same full size opening. Hotel pans are used in steam tables, holding cabinets, refrigerated prep tables and ovens.
What size hotel pan do I need? ›
The size depends on your steam table or prep table well dimensions and your portion requirements. Full size (1/1) pans hold the largest volumes and suit high-output proteins and soups. Half size (1/2) pans are the most common choice for standard buffet and catering lines. Third, quarter and sixth size pans work well for side dishes, sauces and condiment stations.
What is the difference between stainless steel and polycarbonate hotel pans? ›
Stainless steel hotel pans are designed for hot holding in steam tables and direct oven use. They are highly durable and the standard choice for commercial kitchens with heavy daily use. Polycarbonate hotel pans are clear, lightweight and suited for cold holding in refrigerated prep tables and salad bars. Polycarbonate pans should not be used in ovens or on direct heat sources.

What depth hotel pan should I buy? ›
Hotel pan depth is measured in inches. Two-and-a-half inch pans are used for shallow items like sliced meats, roasted vegetables and sheet pan recipes. Four-inch pans are the most versatile and cover most catering and buffet applications. Six-inch pans hold large volumes of soups, stews and braised proteins. Check your steam table well depth before ordering to confirm fit.
